Day 10: Mini-Chip Peppermint Snowballs

One week left! Let me just say that there is only one more week of school before Christmas break. I am so ready for a couple weeks of R & R. Oh, and lots of family time, too! It'll be so nice.


Actually, I'm getting in a bit of family time this weekend. Surprise! I made the trip to Illinois today, to my parents' house. (I left my Business Man at home in the Bean Town... he is re-carpeting his office and has a lot of stuff to do! Normally I wouldn't leave him when he's super-busy, but this weekend with my mom was booked over 2 months ago!)


The reason for this trip is that my mom's house is being displayed on the Historical Society's Annual Tour of Homes tomorrow! That means that she has been decorating for Christmas like a crazy woman, and I volunteered to come for the weekend and help her with any last minute details. I took a vacation day today so that I could arrive at a reasonable hour. 

We have been busy putting the finishing touches on the house, and let me tell you, it's like stepping into a Christmas Wonderland. I will do a full post with tons of pictures tomorrow so you all can share in the fun.

In the meantime, I baked up these cookies before I left the Bean Town this morning. They are very similar to a Mexican Wedding Cookie, but with mini chocolate chips thrown into the mix! They are also wrapped around a Candy Cane Kiss; very fitting for the season. I imagine you could use any type of Hershey Kiss, but I love the burst of mint in the middle.

Funny story

As I was driving home, my mom called me, just to see how my drive was going and to get my ETA. She's been reading about the 25 Days of Christmas Cookies, and all the different cookies. Usually, she's baking up a storm this time of year, too, but with the Tour of Homes and all, she hasn't had much time to bake! She ever so softly asked me on the phone, "Do you by chance have any cookies with you? I've just really been craving Christmas cookies, but have had no time to bake!" 

Haha... of course I had cookies with me! We've got cookies coming out the wazoo! So as soon as I got home, she got to have her Christmas cookie fix.


Here's the recipe!


Mini-Chip Peppermint Snowballs


  •  cups butter, softened
  • ¾ cup powdered sugar
  • 1 tbsp. vanilla extract
  • ½ tsp. salt
  • 3 cups all-purpose flour
  • 2 cups mini chocolate chips
  • 1 package Hershey kisses, candy-cane flavor
  • additional powdered sugar

Method

Preheat oven to 375*F. Beat butter, sugar, vanilla, and salt in large mixer bowl until creamy. Gradually beat in flour; stir in mini chocolate chips. Wrap dough around unwrapped Kisses and shape into a ball. Place on ungreased baking sheet.

Bake 10-12 minutes or until cookies are set and lightly browned. Remove from oven. Immediately sift powdered sugar over cookies, or roll warm cookies in powdered sugar.


And there you have it! And yes, that's a lot of butter. But they're oh-so-good.

Now I'm off to do some more cuddling with this little one!


Isn't she precious? My mom's puppy, Maggie. (Though she doesn't look much like a puppy anymore, she definitely sure acts like one still!)

She very much enjoyed licking the remaining flavor of the buffalo wings I had for dinner off my fingers. Who needs to wash their hands? 


Can't wait to have one of my own some day! (Hint, hint, Business Man... Christmas present?)

Umm... To bad were not allowed to have dogs in our apartment... But I just bought a house this morning so were good! ; )

we tried to make these for a christmas cookie party but there weren't any peppermint kisses so we tried the mint truffle ones and those weren't good. so then we tried to crush up candy canes and put them in the batter and they messed up the consistency so they turned out kinda gross looking but better tasting. Oye!

Ohhh... that's too bad. I've done it with crushed up candy canes before, and it's worked out okay. Did they get really sticky or something?

they lost their ball shape like somebody deflated them and were lumpy.

that's to be expected whenever i'm in the kitchen though...some kind of mishap. :/
