Day 1: Cherry-Oatmeal-Chocolate Chip Cookies

The challenge has begun. The first cookie of 25 cookies. It's a pretty tasty one, too.


Chock-full of dried cherries (straight from Door County, the land of cherries!) and dark chocolate chips, this one's a keeper. These oatmeal cookies are soft and chewy, with a light buttery flavor. My Business Man couldn't keep his fingers out of the dough! (No worries, I made him use a spoon.)


By the way, do you like my new Christmas plate? Perfect for displaying cookies for the challenge! I convinced my Business Man it was a necessary purchase. (For the blog, ya know...)

Oatmeal-Cherry-Chocolate Chip Cookies

 Ingredients
  • ⅔ cup butter, softened
  •  cup brown sugar, packed
  • 2 large eggs
  • 1 tsp. vanilla extract
  • 1 ½ cups rolled oats
  • 1 ½ cups flour
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 1 cup dried cherries
  • 1 cup semisweet chocolate chips



 Method
Preheat oven to 375*F.

Using an electric or stand mixer, beat butter and brown sugar until light and fluffy. Add eggs and vanilla, mixing well. Combine oats, flour, baking soda, and salt in a separate mixing bowl. Gradually add to butter mixture, mixing well after each addition. Stir in dried cherries and chocolate chips with a spatula.

Drop by rounded spoonfuls onto ungreased cookie sheets. Bake 9-11 minutes or until golden brown. (Don't overbake! You want them a little gooey.) Cool on wire rack.
